This Wild Specialty Beer evokes a liquid dessert, blending the rustic complexity of wild fermentation with the indulgence of strawberry gelato. Intense aromas of toasted coconut provide a nutty, creamy foundation that integrates seamlessly with the vibrant, jammy essence of a strawberry coulis. The palate is a balanced interplay between tangy red fruit acidity and a smooth, coconut-driven sweetness. This vibrant profile showcases a sophisticated harmony of funk and fruit, where the toasted coconut provides a rich, tropical counterpoint to the bright, zesty berry notes. The result is a complex, dessert-inspired sensory experience with a refreshing, tart finish.

Appearance. A vibrant, deep pinkish-red to ruby hue (SRM 15-20) with a hazy, nearly opaque body. Features a thin, pink-tinted head with low to moderate retention and minimal lacing.

Aroma. High intensity aromatics of freshly toasted coconut and rich, jammy strawberry. Subtle underlying funky notes of leather and earth from wild yeast are present, alongside a clean, sharp lactic acidity. Malt presence is very low and doughy.

Taste. An initial impression of sweet strawberry coulis and creamy toasted coconut. The mid-palate introduces a firm but balanced lactic sourness that prevents the specialty ingredients from becoming cloying. No hop bitterness or flavor is perceived. The fermentation character is clean but complex with very light Brettanomyces funk. The finish is lingering and fruity with a sweet-tart balance.

Mouthfeel. Medium-full body with a notable creaminess derived from the coconut. Carbonation is moderate. Alcohol warmth is very low, and the beer exhibits a smooth, rounded texture without any harsh astringency.
