This Wild Specialty Beer is a playful, nostalgic reimagining of a classic seaside treat, blending vibrant fruit with complex wild fermentation. Aromas of ripe mango and fresh strawberry sorbet lead the profile, accented by an unmistakable pop of bubblegum and a soothing, creamy vanilla undertone. The palate follows with a bright, puckering tartness characteristic of an American Wild Ale, where the tropical mango character is tempered by a crisp, lactic acidity. The vanilla rounds out the finish, mimicking the melting texture of sorbet while maintaining the dry, funky integrity of its wild base for a complex, candy-like sensory experience.

Appearance. A vibrant coral to deep pinkish-orange hue with a significant hazy to opaque clarity, reminiscent of fruit juice. The head is pale pink with moderate initial height but fades quickly to a thin collar, showing limited lacing.

Aroma. High intensity aromatics featuring lush, tropical mango and jammy strawberry. Strong esters reminiscent of bubblegum and cotton candy are prominent, backed by a sweet, creamy vanilla bean note. A subtle, underlying lactic tartness and very light earthy funk provide a wild fermentation counterpoint.

Taste. Initial impression is a sharp, refreshing acidity followed by an explosion of mango and strawberry sorbet flavors. The middle palate introduces a distinct bubblegum sweetness that is more perceived than residual. Vanilla provides a smoothing effect, softening the lactic bite. The finish is dry and tart with lingering notes of red berries and a clean, acidic snap. No hop bitterness is perceived.

Mouthfeel. Medium-light body with a slightly creamy texture despite the acidity. Carbonation is moderate to high, providing a prickly, effervescent sensation that lightens the fruit weight. Alcohol warmth is very low and well-integrated.
