This Wild Specialty Beer is an elegant homage to the Kir Royale, blending the rustic edge of wild fermentation with the lush, jammy profile of blackcurrant. Vivid fruit notes reminiscent of creme de cassis dominate the palate, supported by a bright, vinous acidity that echoes fine Champagne. The fermentation character provides a subtle, earthy complexity, though the focus remains on the interplay between the tart berry skins and the underlying sweetness. Effervescent and remarkably crisp, it balances the intensity of the fruit with a dry, tannin-edged finish that cleanses the palate, making for a sophisticated and refreshing experience.
Appearance. Deep purple to brilliant ruby with a vibrant, saturated hue. Pours with a moderate, pinkish-tinted head that dissipates fairly quickly, leaving a fine bead of lacing. Clarity is generally high, though a slight haze from fruit pectin may be present.
Aroma. High intensity of dark berry fruit, specifically concentrated blackcurrant with a jam-like richness. A moderate lactic tartness provides a sharp edge, complemented by subtle wild yeast notes of leather and earthy funk. Very low malt aroma, with no hop character.
Taste. Initial punch of sharp blackcurrant fruit and bright lactic acidity. The middle palate reveals a balanced sweetness akin to cassis liqueur, which is quickly cut by a vinous, dry fermentation character. Hop bitterness is negligible; structure is instead provided by fruit tannins. The finish is crisp and clean with a lingering, tart berry skin aftertaste.
Mouthfeel. Medium-light body with a high, spritzy carbonation that mimics the effervescence of sparkling wine. Alcohol warmth is very low. A noticeable but pleasant tannic astringency from the blackcurrants provides a firm, dry mouthfeel that prevents the fruit sweetness from becoming cloying.
