Yonder Brewing & Blending Elixir

This innovative English Porter reimagines the style through a wild lens. It trades brewing water for foraged Birch sap and incorporates Chaga, resulting in a complex, earthy foundation. The cold-steeped dark malts offer soft chocolate and toffee notes without harsh bitterness, perfectly complementing a bright, lactic tartness from ten months of maturation in oak barrels. This aging process introduces delicate tannins and funky wild yeast character. The result is a balanced, sophisticated Elixir where deep, roasted British malt flavors meet the rustic, woody essence of the forest and a refreshing, acidic finish.
Appearance. Deep mahogany to dark brown with brilliant ruby highlights when held to the light. Topped by a dense, creamy, light tan head with moderate retention and delicate lacing.
Aroma. Moderate intensity featuring a blend of dark chocolate, toasted bread, and sweet toffee. These traditional malt notes are layered with complex earthy and woody scents from the Chaga and Birch sap. Distinctive wild yeast funk presents as leather and light hay, alongside a clean, citrusy lactic acidity.
Taste. Initial impression is a vibrant, tart acidity that quickly melds into a smooth malt profile of milk chocolate, biscuity crust, and mild caramel. The Chaga adds a unique, savory earthiness and forest-floor complexity. Oak aging provides subtle vanilla and wood-tannin structure. Finishes dry and refreshing with a lingering tartness and a whisper of herbal bitterness rather than roasted harshness.
Mouthfeel. Medium body with a slightly creamy texture from the cold-steeped malts. Moderate carbonation provides a lively lift to the acidity. Very light oak-derived astringency and a faint, well-integrated alcohol warmth.

Brewed in collaboration with Chef Brad Carter and Bello Wild Food, nothing about this wild beer can be considered ordinary. All water in the brewing process has been replaced by sap, naturally tapped from birch trees in spring. Dark malts were cold- steeped overnight. Chaga, a medicinal fungi that grows on birch, was added to the boil. We then aged it in oak for 10 months with our wild cultures for a tart and funky finish.
