This Specialty IPA is a vibrant and refreshing hybrid, blending the spicy, bready character of a Belgian Witbier with the assertive hop profile of an American IPA. The addition of orange and lemongrass creates a bright, botanical aromatic profile that interweaves with citrusy hops to provide a sophisticated sensory experience. A significant wheat component in the malt bill offers a soft, pillowy texture that balances the firm bitterness typical of the style. The finish is notably dry and crisp, leaving a lingering impression of zesty citrus and light herbal spice. At 5.8% ABV, it maintains a clean fermentation profile while showcasing its complex adjuncts.
Appearance. SRM 3–6. Pale to deep gold. Distinctive haze from wheat proteins and yeast. Large, dense, white head with excellent persistence and thick lacing.
Aroma. High intensity citrus-forward aroma featuring fresh orange peel and the herbal, lemony snap of lemongrass. Moderate spicy esters resembling coriander and clove accompany a low bready wheat malt character. Hop aroma is moderate to high, leaning toward grapefruit and tropical fruit.
Taste. Initial flavors of bright orange and lemon zest are followed by a firm, medium-high hop bitterness. The malt profile is low, providing a clean bready and crackery wheat foundation. Fermentation character is complex, offering light peppery phenols and fruity esters. The finish is dry, crisp, and refreshing with a lingering citrus and herbal aftertaste.
Mouthfeel. Medium-light body with a subtle creaminess from the wheat. Carbonation is high, providing a lively and effervescent mouthfeel. Alcohol warmth is very low and well-integrated. No harshness or astringency.
