Old Ale 8.3 º
Wylam Keepers Ale is a regal, historically-minded Old Ale that presents a zaftig, upholstered profile. A foundation of double roast crystal, red rye crystal, and traditional roast barley provides a dense, malt-loaf base layered with muscovado sugar and liquorice root. Medieval adjuncts of muscat raisins and organic figs provide a concentrated dried-fruit depth, while an orthodox yeast culture contributes ripe plum stone fruit esters. The experience is defined by a sophisticated interplay of pipe tobacco and a bittersweet tartness, evocative of a well-matured stock ale. This 8.3% collaboration is deeply warming and complex, capturing the vinous, evocative character of traditional British strong ales.
Appearance. Deep, mahogany-tinged reddish-brown (SRM 22-25) with a slight haze from the heavy adjunct load. It supports a moderate, creamy, light tan head with average retention and delicate lacing.
Aroma. High intensity and exceptionally complex. Deep aromas of molasses, muscovado sugar, and toffee intermingle with rich dried fruits like figs and raisins. Noticeable notes of pipe tobacco, liquorice, and a vinous, sherry-like oxidation are present, complemented by ripe plum esters. No hop aroma is detectable.
Taste. Initial impression is malty-sweet and luscious, transitioning into a complex mid-palate of malt loaf, dark caramel, and spicy rye. Flavors of muscat raisins and figs are prominent, joined by liquorice root and a hint of roasted grain. The balance is bittersweet, featuring a gentle tartness that cuts through the sugar. The finish is lingering and warming with a plum-like fruitiness and aged tobacco character.
Mouthfeel. Full-bodied and chewy with a plump, velvety texture. Carbonation is low to moderate, enhancing the beer's weight. A distinct, well-integrated alcohol warmth is evident, finishing with a mild vinous astringency.

A stock / keeping ale brewed in collaboration with Newcastle Castle.

Drawn on tradition and produced using a pick of historic ‘strong ale’ ingredients apace with a selection of imported medieval adjuncts which journeyed up the River Tyne circa 1350.

Zaftig, plump and well upholstered with double roast crystal, red rye crystal and traditional roast barley alongside muscat raisins, organic figs and muscovado sugars followed by an unhurried fermentation using an orthodox, hardy yeast strain culture.

A concomitant of rich malt loaf, liquorice root, dried fruit and pipe tobacco intermingle with a bittersweet tartness blended masterfully with ripe plum stone fruit yeasty esters.
