American IPA 7 º 70 IBU
This celebratory West Coast American IPA presents a bold, hop-forward sensory profile defined by its high bitterness and classic dankness. The aroma is driven by the hero hop, Citra, providing intense citrus notes, while Chinook, Cascade, and Simcoe contribute layers of resinous pine and spicy undertones. A foundational malt bill of Dingemans Biscuit and Munich malts offers a savory, toasted depth that supports the aggressive hop character without adding residual sweetness. With a very low terminal gravity, the beer finishes remarkably clean and dry, leaving the palate salivating. It is a quintessential old-school Westie where pine, citrus, and a crisp, bitter snap take center stage.
Appearance. Medium gold to light amber in color. Topped with a persistent, off-white head that leaves significant lacing. Crystal clear brilliance, adhering to the traditional West Coast aesthetic.
Aroma. High intensity hop aroma featuring prominent citrus, grapefruit, and heavy resinous pine. Distinctive dank and spicy notes are supported by a medium-low malt character reminiscent of toasted bread and savory biscuits. Fermentation is clean with no significant esters.
Taste. Initial impression is a sharp, clean bitterness that remains firm throughout the palate. High hop flavors of grapefruit zest and forest pine dominate. The malt profile is supportive rather than sweet, showcasing toasted, bready notes from the Munich and Biscuit malts. Finishes very dry and crisp with a long, lingering bitterness and a clean, hoppy aftertaste.
Mouthfeel. Medium-light to medium body with a smooth, crisp texture. Medium-high carbonation enhances the dry finish. A light, pleasant alcohol warmth is present but well-integrated, with no astringency despite the high IBU.

A classic Single Westie IPA. Dry and bitter, loaded with citrus and pine flavours. Loads of hops on the nose, supported by that savoury toasted malt profile.
