Hellbender is a powerful Red IPA that masterfully bridges the gap between a robust malt backbone and aggressive hopping. The grist utilizes biscuit, caramel, and rye malts to establish a toasted, spicy, and deep toffee foundation that anchors the 7.5% ABV. This malty complexity is met with a high-intensity hop charge of Simcoe, Strata, and Cascade, which project layers of resinous dankness, sharp pine, and bright citrus. The earthy, peppery notes from the rye malts interact with the pungent Simcoe to create a savory depth, while the Cascade provides a classic grapefruit lift, resulting in a full-bodied and intensely flavored experience.
Appearance. Deep reddish-amber to copper in color (15-17 SRM) with high clarity. It features a dense, persistent off-white to light tan head that leaves significant lacing on the glass.
Aroma. High hop aroma with prominent notes of resinous pine, dank herbs, and citrus zest. The malt presence is moderate to high, offering rich scents of toasted bread, spicy rye, and sweet caramel sweetness. Clean fermentation profile with a subtle hint of warming alcohol.
Taste. The palate opens with toasted biscuit and caramel malt sweetness, followed by a firm, medium-high hop bitterness. Flavors of grapefruit, pine resin, and tropical fruit are dominant. The rye adds a characteristic peppery spiciness that balances the sweetness. The finish is medium-dry with a lingering, clean bitterness and a faint trail of toffee-like malt.
Mouthfeel. Medium-full body with a smooth, slightly creamy texture. Moderate carbonation provides a balanced mouthfeel. A noticeable but well-integrated alcohol warmth is present, reflecting its strength without being harsh.
