Working Title Brew Co Faust

Oktoberfest-Marzen 8 º 16 IBU
This elevated Märzen showcases the profound impact of double-decoction mashing on a robust 8% ABV frame. Deep contributions from Munich and Vienna malts create a sophisticated sensory tapestry of toasted almond, honeyed cereal, and biscuit depth reminiscent of Weetbix. Despite its strength, six months of lagering ensures a brilliant clarity and a remarkably snappy, dry finish. Noble hops provide a delicate counterpoint, offering whispers of fresh-cut herbs and green grapes that lift the rich malt profile. The result is an elegant, full-bodied amber lager that balances traditional German malt complexity with a clean, modern crispness and well-integrated alcoholic warmth.
Appearance. Deep reddish-copper with brilliant clarity; topped by a thick, persistent off-white head that leaves delicate lacing.
Aroma. High intensity malt aroma featuring rich toasted bread crust, almond, and honeyed grain. Clean fermentation profile with a very low herbal and spicy noble hop character. A subtle, well-integrated alcohol warmth is present but not sharp.
Taste. Rich and complex malt flavors lead with toasted bread, fresh cereal, and a hint of nuttiness from the Munich and Vienna malts. While the initial impression is malty-sweet, the double-decoction process and extended lagering result in a moderately-dry, snappy finish. Hop bitterness is moderate, providing enough balance to prevent cloying, while hop flavors contribute notes of fresh herbs and green grapes. The aftertaste is clean, with lingering toasted malt and a refined dryness.
Mouthfeel. Medium-full body with a smooth, creamy texture. Medium carbonation. Noticeable but smooth alcohol warmth that is well-integrated into the malt structure. No astringency.

"Our first double-decoction lager! Decoction is a mash regime that involves taking about 1/3 of the mash into the kettle, boiling it, and returning it to the mash. Overall, it does a better job of creating a beautifully clear, super crisp and dry beer, than a single infusion mash that we are used to. And attempting it
