Das Boot redefines the Festbier by bridging traditional richness with modern pale profiles through two months of foeder aging. Built on a base of super pale Pilsner malt and fermented with classic Munich yeast, it balances elegant doughy sweetness with the noble floral complexity of Hallertau and Saaz hops. The wood maturation introduces a sophisticated architecture of spiced vanillin and a subtle textural creaminess. A unique saline mid-palate provides a savory counterpoint to the bready malt core, leading to a remarkably dry and crunchy finish that belies its robust strength. It is a harmonious collision of heritage and contemporary wood-aging technique.
Appearance. Deep gold color (6 SRM) with brilliant clarity. Pours with a persistent, dense white foam stand that leaves fine, creamy lacing on the glass.
Aroma. Moderate to high intensity with a rich foundation of doughy, fresh-baked bread and light toasty malt. Prominent floral and herbal hop character from the noble varieties. Nuanced secondary notes of spicy oak and soft vanillin from the foeder, backed by a clean lager fermentation profile.
Taste. Initial impression is of soft, bready malt richness. The mid-palate features a distinctive saline mineral touch and light oak tannins. A relatively safe approach to season our Foeder, we’ve also imparted some gorgeous texture and spiced vanillin architecture in this pale lager. Sweet, bready malts with deep, floral hop notes, floods the aroma. A full, malt-sweet body, with saline mid-palate leads to a crunchy, dry finish.
