This collaboration West Coast Black IPA presents a sophisticated balance between deep, dark malts and aggressive hopping. A foundation of biscuit and rye malts provides a spicy, complex grain character, while a touch of caramel adds a silky smoothness. The hop profile is driven by Simcoe and Columbus, delivering classic resinous dankness and sharp pine, complemented by the tropical fruit and citrus punch of Motueka Cryo. At 8.5% ABV, it offers a smooth, well-integrated warmth. The experience concludes with a firm, white pepper bitterness that cleanses the palate, ensuring this potent Specialty IPA remains drinkable despite its rich malt depth and dark intensity.
Appearance. Deep black and nearly opaque (SRM 38), displaying brilliant mahogany highlights when held to light. Topped by a thick, persistent tan head with excellent lacing.
Aroma. High intensity hop aroma featuring resinous pine, dank earthiness, and citrus zest. Secondary notes of tropical stone fruit emerge as it warms. The malt presence is moderate, offering toasted biscuit and a spicy rye edge, with very light caramel sweetness and no burnt or ashy character.
Taste. Initial impression of rich, toasted malt and spicy rye. Hop flavors mirror the aroma with prominent resin, pine, and grapefruit. Bitterness is assertive and medium-high, characterized by a clean white pepper finish. Malt flavors are complex but restrained, showing light cocoa and biscuit without harsh roasted grain notes. The finish is dry and lingering with a resinous aftertaste.
Mouthfeel. Medium-full body with a notably silky and creamy texture. Carbonation is moderate. A noticeable but well-integrated alcohol warmth is present, contributing to the smooth profile without any astringency.
