Persistent Cloud Vol. 2 is a robust American IPA that showcases a high-intensity hop profile driven by Amarillo, Galaxy, and Simcoe. The aroma and flavor are dominated by a complex interplay of passionfruit and peach from the Galaxy, bright orange zest and floral notes from Amarillo, and a grounding layer of pine resin and earthy spice from the Simcoe. At 7.4% ABV, it provides a clean, grainy malt backbone that balances a firm bitterness. The experience concludes with a crisp, dry finish, leaving a lingering impression of tropical fruit oils and a refined, resinous snap characteristic of the style.
Appearance. Medium gold to light amber (7-9 SRM) with slight haze. Features a medium-sized, off-white head with excellent persistence and significant lacing.
Aroma. High intensity hop aroma featuring prominent notes of passionfruit, citrus peel, and pine resin. A low, clean, grainy-sweet malt character supports the hops, alongside a very subtle alcohol note and clean fermentation profile.
Taste. Leading with punchy tropical fruit and citrus flavors, the palate follows with a mid-palate of pine and earth. Medium-high bitterness (approx. 60 IBU) is well-supported by a low, toasted grain maltiness. The finish is medium-dry and clean, with a long-lasting hoppy and bitter aftertaste that avoids harshness.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is medium-high. A light, pleasant alcohol warmth is present but remains well-integrated without any astringency.
