Sirius Dog Star is a beautifully composed American Amber Ale that showcases a smooth, complex malt profile driven by a unique blend of six malts. This award-winning red ale opens with an inviting aroma of lightly toasted grains, soft caramel, and subtle New World floral hops. On the palate, the intricate malt bill delivers an initial wave of rich, sweet liquorice and toasted biscuit, beautifully balanced by a moderate, clean hop bitterness. A soft, fruity yeast ester profile emerges towards the finish, leaving a smooth, lingering impression of balanced sweetness and delicate hop character.
Appearance. Deep copper-red in color with brilliant clarity. It pours with a moderate, creamy off-white head that demonstrates good retention, leaving a fine lace along the glass.
Aroma. Moderate aroma featuring a clean caramel and toasted malt sweetness. Low to moderate floral and lightly spicy hop aroma blends with soft, fruity red-apple and pear esters. No diacetyl or DMS is present.
Taste. Initial impression of rich caramel sweetness and toasted biscuit from the complex malt grist, yielding a distinctive hint of sweet liquorice. Moderate hop bitterness provides clean balance. Low floral hop flavor is present. Clean fermentation profile with a soft, fruity finish. Well-balanced, drying slightly in the aftertaste with lingering caramel and mild herbal hop notes.
Mouthfeel. Medium body with a smooth, velvety texture. Moderate carbonation. Alcohol warmth is absent, reflecting its drinkable and sessionable character. Non-astringent.
