This Wild Specialty Beer delivers an immediate burst of fresh fruit, as the Raspberry takes center stage. On the nose, intense notes of red berry brambles mingle with a delicate, sharp lactic acidity and a subtle, earthy funk characteristic of a wild fermentation. The palate is vibrantly tart, mirroring the snap of underripe berries, while the lean malt profile provides a crisp backdrop. It finishes bone-dry with a lingering, zesty raspberry essence and a touch of fruit skin tannin. Refreshing and bright, it exemplifies a modern sour where the fruit and wild cultures harmonize into a singular, punchy experience.

Appearance. Pours a hazy, vibrant pink to light ruby with a short-lived, pink-tinted frothy head. Visible carbonation bubbles rise quickly through the hazy liquid.

Aroma. High intensity aromatics dominated by fresh raspberry puree and seed-like earthiness. Complementary sharp lactic sourness and a faint, funky wild fermentation character provide complexity over a neutral, crackery malt base.

Taste. Immediate, sharp acidity balanced by deep raspberry fruit flavor. The fruit sweetness is largely fermented out, leaving a dry, tart profile. Minimal hop bitterness and low bready malt allow the fruit and wild fermentation acids to lead. The finish is very dry and clean, with a lingering raspberry tartness.

Mouthfeel. Light-bodied and effervescent with high carbonation that scrubs the palate. No alcohol warmth is present. A very slight, pleasant tannin astringency from the raspberry skins adds structure to the mouthfeel.
