Following a 48-hour kettle souring process, the profile presents a clean, lactic acidity that perfectly frames the addition of tropical pineapple. The fruit provides a juicy, tangy core, while a precise addition of sea salt adds a refreshing salinity that heightens the sensory perception and mouthfeel. Appearance. Pale straw to golden color (3-5 SRM). Pours with a moderate white head that dissipates fairly quickly, leaving light lacing. Slight haze is present, typical of a fruited kettle sour.

Aroma. High intensity of fresh, zesty pineapple dominates the bouquet. A clean, sharp lactic sourness provides a bright backdrop, accompanied by a subtle briny note from the sea salt. Low grainy-sweet malt character is present, with no hop aroma or esters.

Taste. Initial impression is sharply tart and fruity, lead by bold pineapple flavors.
