Wiper And True’s Abundance is a sophisticated expression of a Saison, blending classic yeast traditions with a house mixed culture. Foraged elderflowers from the brewery’s own orchard infuse the profile with a delicate, perfumed florality that intertwines with citrus esters and a sharp, peppery spice. The mixed fermentation introduces a subtle, evolving funk and a rustic depth, adding complexity to the grainy, pale malt base. It pours with a lively effervescence and finishes exceptionally dry, balancing its soft floral notes against a firm, refreshing bitterness. This ale captures a vibrant, pastoral elegance with its layered fruit, botanical grace, and developing wild character.
Appearance. Pale gold to light straw in color (5 SRM). Features a dense, rocky, long-lasting white head with significant Belgian lacing. Unfiltered and hazy, displaying high effervescence.
Aroma. High intensity. A complex bouquet of fresh elderflower and floral hops, backed by fruity esters of lemon and pear. Distinctive peppery phenolics from the classic saison yeast merge with a developing funky depth from the house mixed culture, suggesting damp hay and a hint of wild rustic character. Malt is low and cracker-like.
Taste. Initial impression is bright and lively. Malt flavor is low to medium-low, presenting a soft, grainy, and rustic cereal character. Hop flavor is moderate and floral, following the elderflower cues. Hop bitterness is moderate and firm, accentuated by an extremely high attenuation. Yeast-derived black pepper and citrus notes lead into a bone-dry, clean finish with a lingering spicy and floral aftertaste.
