A complex, vibrant Saison that bridges farmhouse tradition with spontaneous fermentation. The aroma is led by the distinctive Nelson Sauvin hops, offering notes of white grape, gooseberry, and crushed passionfruit. Blending with lambic introduces a bright, lemony acidity and earthy funk that integrates seamlessly with the spicy, peppery esters of the base yeast. Aging in a Bofkont wine barrel imparts subtle oak tannins and a sophisticated vinous depth. Highly effervescent and exceptionally dry, it finishes with a crisp, refreshing snap where the vinous hop character and a gentle lactic tang from the lambic component linger elegantly on the palate.
Appearance. Hazy, pale straw-gold with an exuberant, rocky white head that exhibits excellent retention and leaves delicate Belgian lace.
Aroma. High intensity; aromatic white wine, gooseberry, and tropical fruit from Nelson Sauvin hops are layered over peppery phenols, hay-like wild funk, and a soft, grainy malt backbone.
Taste. Initial impression of tart citrus and white grape leads into a rustic, grainy malt profile. Spicy yeast phenols and moderate hop bitterness are balanced by a sharp, clean lactic acidity from the lambic blend. The finish is bone-dry and vinous with a lingering peppery aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation. Crisp and prickly on the tongue with a refreshing finish and very light, well-integrated alcohol warmth.
