This complex Saison, a collaboration between Wings Brewing Company and Bofkont, presents a masterclass in blending and barrel aging. Originally brewed in 2021, it evolved over nine months in wine barrels before a brief rest in maple syrup barrels and a final integration with selected Bofkont lambic. The resulting profile is a rustic tapestry of citrusy Saison esters, peppery phenolics, and a deep, leathery funk. Vinous oak notes and a whisper of maple-infused wood add layers of sophistication. Brilliantly dry and effervescent, it balances tart acidity with a lingering, earthy finish that honors its farmhouse and spontaneous fermentation roots.
Appearance. Deep gold to light amber (8-10 SRM) with a persistent, hazy clarity typical of an unfiltered blend. It features a dense, rocky ivory head with excellent retention and intricate Belgian lacing.
Aroma. High intensity with a deeply layered profile. Initial notes of funky, earthy Brettanomyces and leathery lambic character are balanced by bright citrus esters and cracked black pepper. Distinct vinous oak and white wine aromatics emerge, followed by a subtle, woody maple undertone and a faint grainy malt base.
Taste. The palate opens with a refreshing tartness from the lambic blend, transitioning into grainy malt and spicy yeast flavors. Mid-palate reveals tannins from the wine barrel and a complex mélange of stone fruit and lemon zest. The maple syrup barrel contributes a rounded, toasted wood character without residual sugar. It finishes bone-dry with a lingering, funky, and mildly acidic aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. A light, pleasant tannic astringency from the oak enhances the dryness. Alcohol presence is subtle and well-integrated, providing only a very light warmth.
