Wills Phase 2 is an exploratory Double IPA that showcases a vibrant Southern Hemisphere hop profile. The aromatic intensity is immediate, led by the distinctive white wine and crushed gooseberry notes of Nelson Sauvin, complemented by the zesty mojito-lime brightness of Motueka. Peacherine adds a lush layer of ripe stone fruit and nectarine to the bouquet. On the palate, a clean, lean malt backbone provides a neutral canvas for these complex hop flavors, finishing with a firm, integrated bitterness and a crisp, dry profile. Despite its 8% ABV, the beer remains remarkably drinkable, emphasizing hop saturation over heavy malt sweetness.

Appearance. Deep gold to pale orange with a slight modern haze. Topped by a dense, persistent white head that leaves significant lacing.

Aroma. Intense hop aroma featuring pungent white grape, gooseberry, and fresh lime zest. Prominent stone fruit notes of peach and apricot emerge alongside a supportive, neutral, cracker-like maltiness. Fermentation is clean with a very low, smooth alcohol note.

Taste. Initial hop-forward punch of tropical fruit, lime, and white wine. Bitterness is high but smooth, avoiding harshness. The malt flavor is low, providing a soft, bready support. Finishes very dry with a lingering citrus and resinous aftertaste. A faint, clean alcohol presence is well-integrated.

Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is medium-high, providing a lively prickle. Restrained alcohol warmth is present but appropriate for the strength.
