This potent Double IPA showcases a modern hop profile led by Simcoe, Sabro, and El Dorado. Intense aromas of fresh-cut pineapple and ripe stone fruit from the El Dorado meld with the signature coconut and tropical cream notes of Sabro, while Simcoe provides a grounding layer of resinous pine and grapefruit zest. On the palate, a soft, neutral malt base allows these vibrant hop flavors to shine through without excessive sweetness or heavy body. Despite its strength, it finishes clean and dry with a firm, integrated bitterness. The result is a bold yet approachable ale that balances tropical decadence with a classic resinous backbone.
Appearance. Gold to light orange in color (7-9 SRM) with good clarity and a moderate-sized, persistent off-white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of pineapple, stone fruit, and tropical coconut, underpinned by resinous pine and citrus zest. Malt character is low and neutral-grainy. Fermentation is clean with a very light, smooth alcohol presence.
Taste. Initial impression is a burst of tropical fruit and resinous hop flavor. Pineapple, melon, and creamy coconut dominate, supported by a low, soft, neutral malt character. Bitterness is high but smooth, lacking harshness or astringency. The finish is dry with a lingering aftertaste of citrus peel and pine.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is medium-high, providing a crisp lift. A restrained, smooth alcohol warmth is present but well-integrated.
