Cosmic is a quintessential American IPA that pays homage to the classic West Coast profile. This 6% ABV ale showcases a vibrant hop quartet of Chinook, Centennial, Cascade, and Simcoe, delivering a powerful punch of resinous pine and bright citrus zest. The nose is greeted by grapefruit peel and forest floor notes, supported by a lean, grainy malt base that ensures the hop character remains the focus. On the palate, a firm, crisp bitterness leads into a dry, refreshing finish. The interplay of classic Pacific Northwest hops provides a timeless depth of spice and floral undertones, creating a clean, assertive sensory experience.
Appearance. Medium gold with brilliant clarity. Pours with a medium-sized, persistent white head that leaves intricate lacy patterns on the glass as it recedes.
Aroma. High hop intensity featuring prominent grapefruit, orange rind, and pungent pine resin. Subtle floral and spicy notes from the Centennial and Cascade emerge as it warms, supported by a low, clean, bready malt sweetness and a neutral fermentation profile.
Taste. Leading with a medium-high to high bitterness, the flavor profile is dominated by citrus zest and earthy resin. The malt is low and crackery, providing a lean canvas for the intense hop character. It features a dry finish with a lingering, crisp bitterness and a touch of floral spice in the aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is medium-high, accentuating the dry finish. There is a very light, smooth alcohol warmth and no perceived astringency.
