Ebulum Elderberry Black Ale is a rich, evocative Spice, Herb, or Vegetable Beer inspired by ancient Highland traditions. It presents a complex interplay between deep roasted barley and decadent chocolate malt, creating a sturdy foundation of cocoa and char. This darkness is pierced by the vinous, slightly tart character of infused elderberries, which add a unique dark-fruit dimension. Appearance. Deep ruby-black to opaque ebony (35–40 SRM). Topped by a dense, persistent tan head with fine lacing. Clarity is generally clear, though it may show a slight dark-fruit haze when cold.
Aroma. High intensity, dominated by roasted malt notes of dark chocolate and espresso. The elderberry infusion contributes a distinct, vinous aroma reminiscent of blackberries and tart skins. A moderate earthy hop presence provides a grounded herbal backdrop, while fermentation esters remain low and clean.
