This 2022 vintage Wood-Aged Cider presents a sophisticated marriage of orchard fruit and forest influence. The primary sensory driver is the Quercus (oak) barrel aging, which imparts deep vanillin, toasted spice, and subtle caramel notes over a base of mature, harvest-ripe apples. Expect a refined profile where the natural acidity of the cider is softened by the wood's structural tannins. Hints of dried pomace and baked apple skins emerge in the mid-palate, leading to a complex, dry finish. The integration of the 7.5% ABV provides a gentle, supporting warmth that enhances the lingering, woody aftertaste without overshadowing the fruit.
Appearance. SRM 6–10; deep gold to light amber color. Brilliant clarity with a still to very lightly sparkling appearance; any foam is white and dissipates rapidly.
Aroma. Moderate to high intensity with a complex blend of baked apple, dried apple peel, and prominent oak-derived vanillin. Toasted wood notes and a hint of spicy clove are present, alongside a clean fermentation profile lacking in heavy esters.
Taste. Initial impression is dry and fruit-forward with flavors of ripe culinary and bittersweet apples. Significant oak influence provides a mid-palate of vanilla, toasted coconut, and light wood tannins. Balance is slightly acidic with a firm structural grip. The finish is long, dry, and clean with lingering wood spice.
Mouthfeel. Medium body with a noticeable tannic astringency from the barrel aging. Low carbonation. A light, pleasant alcohol warmth is present, contributing to a smooth, non-aqueous texture.
