This 2021 vintage still cider is an expressive showcase of heritage fruit, blending Major apples with Red Foxwhelp, Frederick, Kingston Black, Ellis Bitter, Improved Lambrook Pippin, Dove, and Harry Masters Jersey. The wild yeast fermentation yields a complex, fruit-forward profile marked by rustic earthiness and spicy phenolics. Bone dry and light-bodied, it presents a sophisticated structure where the sharp acidity of Frederick and Red Foxwhelp balances the firm, grippy tannins from Ellis Bitter and Harry Masters Jersey. Improved Lambrook Pippin and Dove contribute to a nuanced aromatic depth, resulting in a refined English cider that finishes lean, clean, and profoundly savory.
Appearance. Deep straw to pale gold color; brilliant clarity. Completely still with no visible carbonation, head formation, or lacing.
Aroma. Moderate to high intensity. Freshly pressed apple juice and bruised apple skins dominate the nose. Significant wild yeast character provides earthy, spicy, and slightly leathery notes. Faint floral esters and a hint of honeyed sweetness from the Improved Lambrook Pippin and Dove varieties are present. No detectable diacetyl.
Taste. Initial impression is bone dry and tart. Sharp, bright acidity from Red Foxwhelp and Frederick apples leads into a complex mid-palate of savory, astringent tannins from Kingston Black and Harry Masters Jersey. Wild yeast provides a rustic, phenolic complexity. The finish is exceptionally dry, lingering with apple skin character and a clean, acidic snap. No sugar remains to mask the intricate fruit structure.
Mouthfeel. Light body with a thin, vinous texture. Zero carbonation (still). Notable astringency from apple tannins provides significant structure and a drying, puckering quality on the tongue. Subtle, well-integrated alcohol warmth.

We have combined some beautiful Major from our home orchard with a range of other varieties from other orchards (Red Fowhelp, Frederick, Kingston Black, Ellis Bitter, Improved Lambrook Pippin, Dove, Harry Masters Jersey). The cider is fruit forward with light body but good tannic structure. Great with food, especially light but savoury food like roast chicken.
Drink lightly chilled, not too cold. Hand picked fruit, wild yeast, no additives. May contain naturally occurring sulphites. 750ml. 7.4%
