Wilding Cider Home Orchard (2022)

Description

Wilding took on our home orchard (Wilding Orchard) in 2018 it was very heavily skewed towards bittersweets with almost no sharps or bittersharps. In order to rebalance it to better suit natural cider making they embarked on a process of top working (grafting) to change Bulmer’s Norman and some Bisquet trees over to Court de Wyck, Foxwhelp, Kingston Black and Porter’s Perfection, with other varieties coming later. This cider is a first taste of the new look orchard as they finally had enough fruit to contribute to a single orchard tank. Of course 2022 was an exceptional vintage but they are very encouraged by the results of this blend and it offers a definitely different character to our other ciders owing to both the quality and diversity of sharps/ bittersharps involved. It contains Dabinett, Yarlington Mill, Chisel Jersey, Ellis Bitter, Major, Bulmer’s Sweet, Court de Wyck, Kingston Black, Porter’s Perfection and Foxwhelp. Made in the Rural Method this retains some sugar to dance on the tongue but it has plenty of very good quality grippy tannin which give intrigue and complexity. It’s very delicious and drinkable without being at all simple, and this is an excellent cider for good hearty eating.

Wilding Cider are orchard cider makers and are based in Chew Magna, North Somerset. They mostly grow Somerset cider apple varieties, in traditional orchards, managing them in a careful organic way. Fruit is picked from the ground, letting the fruit mature and fully ripen before pressing, and then fermented gently and slowly with wild yeasts, no sulphites and plenty of time.

Lightly Sparkling Medium Fine Cider

As well as these acid led varieties the blend is comprised with an assortment of bittersweet varieties all from the one orchard.

This cider is a first taste of the new look orchard, made in the Rural Method this retains some sugar to dance on the tongue but it has plenty of very good quality grippy tannin which give intrigue and complexity. Pet Nat Dry Sparkling Fine Cider

As well as these acid led varieties the blend is comprised with an assortment of bittersweet varieties all from the one orchard.
 
Drier cider than the previous vintage to keep the alcohol levels up and it has been bottled as a pet nat that gives a nice frothy mousse of bubbles when pouring. It's excellent as an aperitif with its acidity but can also be paired with hearty food owing to the light level of tannin. Light and fresh fruit predominate - kiwi, gooseberry, pineapple and green apple. Alc. 6.4%
