Hive Mind is a complex English Cider showcasing a masterfully balanced blend of Harry Masters Jersey, Stoke Red, Bisquet, Yarlington Mill, Browns Apple, Dabinett, Le Bret, Dove, Egremont Russet, and Sweet Coppin apples. The aroma is a vivid tapestry of the orchard floor, blending floral notes with a distinctive beehive character reminiscent of beeswax and wildflower honey. Partial maturation in old oak casks lends a sophisticated structural depth without overshadowing the fruit. On the palate, a bright, fresh acid character from the Browns Apple and Stoke Red is met by the firm, astringent tannins of the bittersweet varieties, culminating in a dry and remarkably long finish.
Appearance. Medium gold to deep amber (SRM 6-9). Brilliant clarity from extended bottle maturation. Effervescence is minimal to moderate with a thin, fast-fading white collar and no lacing.
Aroma. High intensity. Rich, bittersweet apple aromatics with complex layers of beeswax, dried flowers, and an earthy orchard floor musk. Subtle spicy notes from old oak integration and wild yeast fermentation provide depth, free from heavy sulfur or acetic flaws.
Taste. The initial impression is vibrantly acidic and dry. Deep apple flavors range from fresh juice to dried skins. Moderate phenolic bitterness and high astringency from apple tannins provide significant structure. Fermentation character is clean yet rustic with a lingering, savory aftertaste of wood and apple pomace.
Mouthfeel. Medium body with a noticeable alcoholic warmth consistent with its strength. Carbonation is low to moderate (petillant). High astringency and a puckering dryness create a clean, refreshing palate despite the complexity.
