This elegant English Cider from the Ditcheat Hill orchard presents a refined, delicate expression of its Somerset terroir. A sophisticated blend featuring Yarlington Mill, Browns, Ashton Brown Jersey, Sweet Coppin, Harry Masters Jersey, and Dove apples, it leads with high-toned fruity aromas and a hint of floral spice. The palate is defined by a lean, poised acidity and a structural tannic grip that provides an earthy, mouth-coating depth. Moving towards the drier side of medium-dry, its sparkling effervescence lifts the complex orchard fruit notes, resulting in a balanced, clean finish that highlights the purity of the fruit.
Appearance. Medium gold color. Brilliant clarity with a lively, fine-beaded sparkling effervescence and no head retention, typical of the style.
Aroma. Moderate to high intensity of fresh and bittersweet apple character. Notable spicy and floral notes from the Yarlington Mill apples are present, complemented by a clean fermentation profile and a subtle, earthy orchard floor complexity.
Taste. Initial impression is of crisp, tart apple fruit followed quickly by a firm, structured tannic bitterness. The lean acidity of the Browns variety provides a sharp counterpoint to the subtle residual sweetness. Complex flavors of dried fruit and leather from the Ashton Brown Jersey and Harry Masters Jersey varieties emerge toward a clean, drying, and lingering tannic finish.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. Astringency is moderate to high, providing a characteristic 'grip' on the palate without being harsh or puckering. No alcohol warmth.

Ditcheat Hill is an orchard of exceptional terroir, overlooking the wide Brue valley. Wilding have been able to take this cider a good bit drier than usual to keep the ABV up, and rather than luscious and sweet this is medium dry and more delicate on the tongue with a little more sparkle. It lends itself perfectly to more savoury foods.
Light fruit from red apple to lemons via stone fruit and strawberries. Nice elegant tannins on the tongue, some freshness from the acidity.
