This 2023 vintage Heritage Cider presents a sophisticated, bone-dry profile defined by its traditional orchard origins. On the nose, it leads with vibrant aromas of pressed heritage apples, wild yeast earthiness, and a subtle floral lift reminiscent of apple blossoms. The palate is sharply defined by high acidity and a structured tannic backbone, offering notes of dried apple peel and tart green fruit. Its lean, crisp character reflects the meticulous blending of the Commix series, finishing exceptionally clean with a lingering mineral snap that invites another sip, embodying the rustic elegance of a well-crafted Somerset dry cider.
Appearance. Brilliant straw to pale gold color. Effervescent with a fleeting white collar that dissipates quickly, leaving no lacing. High clarity.
Aroma. Moderate to high intensity of fresh and fermented apple fruit. Subtle phenolic notes of leather and earth, typical of wild fermentation. Low floral esters; no hop or malt character present.
Taste. Initial impression is sharp and bone dry. Dominant flavors of tart apple, lemon zest, and raw cider fruit. Balance is heavily skewed toward acidity and tannin rather than sweetness. No hop bitterness or malt presence. Finish is quick, dry, and refreshing with a light puckering quality.
Mouthfeel. Medium-light body with high, prickly carbonation. Notable astringency from apple tannins provides structure. Minimal alcohol warmth at 5.9% ABV.
