On the palate, expect a structured experience where bittersweet apple tannins provide a firm, drying grip, balanced by a vibrant, vinous acidity. Being unfiltered and unpasteurized, it retains a textured, medium body and a lingering, savory finish of apple skin and hay, making it an exceptional companion for rich foods.
Appearance. Deep gold to amber (SRM 7-9); slight haze due to being unfiltered; moderate effervescence with a thin, white, rapidly dissipating collar.
Aroma. Moderate-high intensity; rich, ripe apple character with spicy and earthy overtones; notable wild yeast esters providing hay and leather notes; no sulphite-derived sulfur.
Taste. Initial tartness leads to a complex, dry apple flavor; firm tannin structure provides a tea-like bitterness; earthy, rustic fermentation notes; finish is very dry and lingering with apple-skin astringency.
Mouthfeel. Medium body; moderate carbonation; noticeable tannin-driven astringency; light alcohol warmth; creamy texture from lack of filtration.

Description Commix is a classic blended cider for drinking with food. This vintage is a blend of various bitter sweets & bittersharp apples: Yarlington Mill, Dove, Brown’s, Bisquet, Chisel Jersey, Sweet Coppin & Ellis Bitter.
Compared to previous years this blend is a bit different, slightly more residual sugar, bit more tannin and more aroma. Where the 2021 vintage was quite lean and with real tannic structure, the 2022 is lusher and bolder. This is well balanced, easy – drinking cider with fresh fruit on the nose, palate cleansing acidity and good tannic backbone, balanced with a little residual sugar.
Intentionally really great with food, Sam loves it with steak and chips but also great with cheese, grilled fish and bolder summer vegetables, pork chops. Fermented with wild yeasts, with no sulphites, & no filtering or pasteurisation. Still medium dry cider. 750ml. 6.1%.
