Commix 2020 is a sophisticated English Cider crafted from a specific single-orchard blend of Dabinett, Stoke Red, and Sweet Coppin apples. This vintage presents a vibrant sensory profile defined by a fresh, orchard-fruit nose that captures the essence of the harvest. On the palate, the bittersharp influence of Stoke Red provides a crisp structural backbone, while the bittersweet Dabinett contributes depth and soft, rounded tannins. The pure sweetness of Sweet Coppin leaves a gentle touch of residual sugar, ensuring a well-balanced and approachable character. This cider masterfully pairs its rustic complexity with a clean, fruit-forward finish, making it a versatile and refreshing choice.
Appearance. Pale gold to amber (SRM 5-7). Brilliant clarity with a brief, effervescent white head that leaves no lacing. Low to moderate carbonation visible through steady, fine bubbles.
Aroma. High intensity of fresh apple character. Prominent notes of ripe apple skins and earthy tannins from the Dabinett apples, complemented by a sharp, zesty fruitiness from the Stoke Red. No yeast-derived sulfur or diacetyl; clean fermentation profile with a subtle floral honey note from the Sweet Coppin.
Taste. Initial impression is of bright, fresh fruit. The flavor profile is dominated by a harmonious blend of sweet apple juice and tart crabapple-like acidity. Mid-palate introduces soft, velvety tannins that provide structural grip. The slight residual sugar is perfectly balanced by the bittersharp acidity, leading to a medium-dry finish. No hop bitterness or malt flavors present. Complexity is driven by the interaction of fruit acids and phenolics.
Mouthfeel. Medium body with a slight, pleasant oiliness from the residual sugar. Moderate carbonation provides a gentle tingle on the tongue. Noticeable but soft astringency from the tannins adds a drying quality to the finish. No alcohol warmth at 5.9% ABV.
