This Brett Beer presents a complex tapestry of umami and earthiness, anchored by a 70% Vienna malt grist and heritage Schooner barley. The nose is an evocative blend of stone fruit esters from a warm native-flower fermentation and the savory, forest-floor depth of foraged saffron milkcap mushrooms. On the palate, the inclusion of shoyu kasu introduces a unique savory complexity that complements the herbal, earthy character of Fuggle hops. With a dry, highly attenuated finish characteristic of the style, it balances rustic funk with a nuanced, bready wheat structure and a lingering, savory depth.
Appearance. Deep gold to burnished amber (8-12 SRM) with a persistent, ivory-colored head that leaves fine lacing. The presence of Beaufort soft red wheat and a mixed-culture fermentation results in a soft, hazy appearance with a slight opalescence.
Aroma. High intensity with a multifaceted profile of stone fruit, dried apricot, and pineapple esters. The wild house culture provides a distinct rustic funk—hay and light barnyard—while the saffron milkcap mushrooms and shoyu kasu contribute a profound savory, earthy, and slightly nutty umami character. Subtle herbal and floral notes from Fuggle hops emerge in the background.
Taste. The initial impression is one of toasty, bready malt from the Vienna base, which is quickly overtaken by a complex interplay of savory elements. The saffron milkcap mushrooms provide an earthy depth that melds with the salty-savory notes of shoyu kasu and koji. Hop bitterness is moderate, providing enough structure to balance the savory weight. The finish is remarkably dry and crisp, with lingering notes of earthy mushroom and bright citrusy funk.
Mouthfeel. Medium body with a pleasing texture enhanced by the soft red wheat and the protein-rich shoyu kasu. Carbonation is high, providing a lively and scrubbing effervescence that keeps the savory elements from becoming heavy. There is a subtle, well-integrated alcohol warmth.

The making of this beer is rather in-depth and I highly recommend peeking at the full blog post to read the whole story. Our first beer made with koji released outside the Collective. For the current purposes, it feels like one of the most 'Belgian' reminiscent beers we have made in some time with the malt-sweetness combining with the fermentation spice. Tasting it before release, it it beguiling and fun. Leaving a lot of hidden corners on the palate to be discovered, encouraging the drinker to taste it again and again. I'm very proud to share this fitting ale for the cooler months, enjoy. Meesh's tasting notes - The nose is lifted, leading with candied orange and cola spice. There is a burnt butter richness there too, and sweet bready malt reminiscent of freshly baked sourdough. The palate is delicate, with a fresh acid line. Citrus follows through here, adding a liveliness to the richer umami notes. An undeniable shoyu tang on the finish.
