Appearance. Deep golden (6-9 SRM) with a slight, natural haze. Pours with a moderate white head that dissipates to a thin collar; minimal lacing due to high attenuation and fruit oils.
Aroma. High intensity with a complex blend of aged Brettanomyces character, featuring notes of wet hay, horse blanket, and a subtle earthiness. Prominent stone fruit esters from plumcots and floral, vinous hints from Black Muscat grapes dominate. Moderate hop aroma of citrus peel and wildflowers from the dry-hopping.
Taste. Initial impression is very dry and crisp. Distinct flavors of tart plum and dark grape skins meld with a rustic, funky Brett character of hay and leather.
