Village 2021 is a vivid sensory expression of spontaneous fermentation, blending rustic grain character with wild complexity. The foundation of Australian heritage malted barley and raw wheat offers a nutty, cracker-like cereal depth, transformed by a three-hour boil and coolship exposure in the Blue Mountains. High-intensity aromas of lemon zest, damp hay, and earthy funk emerge, complemented by subtle oak tannins from a year in puncheons. The palate is defined by a sharp, clean lactic acidity and nuances of apricot and white pepper. Utilizing Australian aged hops to minimize bitterness, this Experimental Beer finishes bone-dry and effervescent, showcasing a sophisticated balance of wood, grain, and microflora.
Appearance. Straw to light gold (4-6 SRM). Moderate white head with good retention and light lacing. Slight haze from the turbid mash and raw wheat, but generally bright.
Aroma. High intensity of wild funk including horse blanket, hay, and goaty notes. Moderate fruit esters of lemon and under-ripe peach. Low grainy-sweet malt character from heritage malted barley. No hop aroma due to the use of aged hops. Light oak-derived vanilla and woodiness.
Taste. Initial sharp lactic acidity followed by a complex melange of earthy funk and sourdough bread from the raw wheat. Low fruit flavors of green apple and citrus. Hop bitterness is nearly absent. Fermentation is very clean with no diacetyl or fusels. Finish is bone-dry and highly attenuated with a lingering mineral and tart aftertaste.
Mouthfeel. Medium-light body with a crisp, nimble texture. High carbonation providing a prickly, champagne-like effervescence. Low alcohol warmth. Light oak-derived astringency adds structure without being harsh.
