Tingha presents a delicate, rustic exploration of terroir centered on the unique Yipti wheat varietal. This Brett Beer, built on a Saison foundation, offers an aromatic bouquet of ripe stone fruit and Meyer lemon intertwined with the signature Wildflower house funk of sun-dried hay and floral honey. The specialized Yipti wheat imparts a distinctive silken texture and a nutty, wholesome grain character that anchors the ethereal fermentation profile. It is exceptionally dry and lively, finishing with a crisp, mineral snap and a lingering floral earthiness that highlights its sustainable farm origins and artisan sourdough inspiration.
Appearance. Pale straw to light gold (3-4 SRM). Effervescent with a voluminous, mousse-like white head that shows excellent retention and fine lacing. Features a slight, natural haze consistent with high wheat content and unfiltered Brettanomyces activity.
Aroma. Moderate to high intensity. Complex fermentation-forward notes of apricot, white peach, and lemon zest. A rustic, earthy backdrop of wet hay, dusty grain, and a hint of white pepper persists. The Yipti wheat provides a subtle, sweet doughy scent that complements the mild funk.
Taste. Bright and highly attenuated. Initial flavors of zesty citrus and underripe stone fruit give way to a nutty, rustic malt backbone derived from the raw wheat. Hop bitterness is low to moderate, providing just enough structure to balance the grain. Brett-driven notes of earthy funk and mineral salts lead to an incredibly dry, clean finish with a soft, peppery aftertaste.
Mouthfeel. Medium-light body with a soft, pillowy texture provided by the Yipti wheat proteins. High, sparkling carbonation provides a refreshing, champagne-like prickle on the tongue. Alcohol warmth is negligible, ensuring high drinkability.
