This Australian Wild Ale presents a masterful marriage of a barrel-aged amber base and the vibrant intensity of fresh Morello sour cherries. On the nose, a complex tapestry of bright cherry skin and soft funk unfolds, underpinned by the subtle vanillin and structured tannins of seasoned oak. The palate is defined by a refined acidity that amplifies the tart Morello fruit profile, while the four-month maceration and refermentation process contribute a bone-dry finish and sophisticated depth. Expect a layered experience where the wild fermentation’s rustic earthiness complements the succulent, stone-fruit core, resulting in a balanced, highly effervescent, and vinous character.
Appearance. Deep ruby to garnet with brilliant clarity; a persistent, pink-tinted, fine-beaded foam head with excellent lacing.
Aroma. High intensity; dominant notes of tart cherry and cherry skins supported by a rustic funk (barnyard, hay) and a hint of almond-like pit character; subtle toasted oak and a faint, bready amber malt backbone.
Taste. Initial impression of sharp, refreshing lactic acidity leads into rich, authentic sour cherry flavors; minimal hop bitterness. The seasoned oak provides a dry, woody structure alongside complex fermentation esters of stone fruit and a spicy funk. Finishes exceptionally dry and clean with lingering tartness.
Mouthfeel. Medium-light body; high carbonation providing a lively, prickly sensation; light tannic astringency from fruit skins and oak; very mild, well-integrated alcohol warmth.
