This 2021 vintage of St Phoebe from Wildflower is a masterful Brett Beer that marries a barrel-aged golden ale with Ebony Sun plums. It presents a captivating sensory tapestry, opening with heady spice aromas of cinnamon quill and star anise. These savory notes lead into a vibrant fruit core of ripe plum, tart cranberry, and red apple. The palate is deceptively soft and full, balanced by the characteristic dryness of a mixed-culture fermentation. Subtle vinous undertones from the oak aging intermingle with a whimsical finish of red creaming soda and candy floss, creating a complex yet approachable wild ale.
Appearance. Exhibits a luminous deep rose to ruby-amber hue with a slight, natural haze. Pours with a moderate, fine-beaded off-white to pale pink head that shows fair retention and leaves delicate lacing.

In 2021, St Phoebe was made by blending barrel aged golden mixed culture fermentation ale with 996kg of fresh, tree ripened Ebony Sun plums hand picked from Thornbrook Orchard in Nashdale, NSW.

The 2021 edition of St Phoebe was made in a similar manner to the other stonefruit beers (Thomas, Henry and Abigail) whereby Wildflower source and macerate whole, real fruit from Nashdale with barrel ripened Gold from the cellar. This year, the beer had a whole six months to hang out with these plums and soak up every last bit of their sweet plummy goodness before being blended and bottled in October 2021. The beer went through its ultimate fermentation in bottle for carbonation and conditioning for 4 months before its now release.
