This Australian Wild Ale, an expressive Brett Beer, showcases the vibrant character of hand-picked Ebony Sun plums. Barrel-aged for complexity, the nose is highly perfumed with notes of rose water and ripe stone fruit, reminiscent of a skin-contact Pinot Gris. On the palate, the mixed-culture fermentation introduces a sophisticated funk and dark spice complexity that balances the sweet purple fruit. Macerated for four months, the integration is seamless, offering a moreish, gentle acidity and a bone-dry finish. Effervescent bottle conditioning provides a creamy texture that elevates this elegant, fruit-forward expression of wild fermentation and artisanal blending.
Appearance. Deep ruby to burnished rose gold with a soft, hazy glow from the plum refermentation. The head is moderate, light pink-tinted, and shows fair retention with delicate lacing.
Aroma. High intensity and highly perfumed. Dominant aromas of ripe Ebony Sun plums and floral rose water are supported by nuanced Brettanomyces funk, ranging from wet hay to earthy spice. Subtle oak-derived vanillin and stone fruit esters complement the aroma.
Taste. Initial impression is of juicy, sweet purple plums, quickly followed by a complex interplay of barnyard funk and dark kitchen spices. The malt provides a neutral, lean backdrop, allowing the fruit and fermentation character to lead. Finishes very dry with a gentle, refreshing lactic acidity and a lingering, wine-like fruit skin complexity.
Mouthfeel. Medium-light body with a noticeably high, spritzy carbonation that creates a creamy, sparkling wine mouthfeel. Very low alcohol warmth; smooth and highly attenuative with no harsh astringency.
