St Henry 2025 is a sophisticated golden barrel-aged ale that captures the essence of Australian summer. Fermented with a diverse mixed culture of native New South Wales yeast and bacteria, the base provides a rustic, funky foundation of hay and earth. The showcase ingredient, 500kg of fresh Orange Red apricots, imparts an intense, juicy stone fruit character that permeates both the nose and palate. Six months of maceration and barrel aging integrate these flavors with soft oak tannins and a bright, refreshing acidity. The result is a bone-dry, effervescent Brett Beer with a lingering, fruit-forward finish.
Appearance. Deep golden to soft amber (6–9 SRM) with a slight, hazy fruit-induced opalescence. Pours with a fine-beaded, white head that shows moderate retention and delicate lacing.
Aroma. High intensity aromatics of sun-ripened Orange Red apricots and apricot skins dominate. Beneath the fruit lies a complex web of native yeast funk—wet hay, dusty earth, and a hint of floral honey—supported by subtle toasted oak and a light, lemony tartness.
Taste. Immediate, sharp apricot flesh and tart skin flavors meld with a rustic, grainy malt base. The mid-palate introduces a mild, refreshing acidity and earthy funk characteristic of native microflora. The beer is exceptionally dry and crisp, finishing clean with lingering stone fruit esters and minimal hop bitterness (approximately 10 IBU).
Mouthfeel. Medium-light body with high, sparkling carbonation that provides a prickly, refreshing texture. Alcohol warmth is very low. A touch of tannic dryness from the apricot skins and oak aging adds structure without any harsh astringency.
