St. Henry 2023 is a luminous expression of Australian wild fermentation, showcasing a vibrant golden hue. This iteration centers on a five-month maceration of fresh, tree-ripened Trevatt and Robada apricots within an aged Gold base. The sensory experience is defined by the stone fruit, shifting from sweet dried apricots and delicate floral chamomile on the nose to jammy, succulent fruit on the palate. A zippy, sherbet-like acidity provides a refreshing counterpoint to the underlying creamy vanilla notes and structural oak backbone. It finishes exceptionally dry, leaving a lingering impression of sun-drenched orchards and sophisticated, nuanced Brettanomyces fruitiness.
Appearance. Luminous deep gold (7-9 SRM). Pours with a fine-beaded, white head of moderate retention; slight haze present from the heavy fruit maceration and natural bottle conditioning.
Aroma. High intensity. Punchy aromas of sun-dried apricots and apricot skins are primary, supported by delicate floral notes of chamomile. The fermentation character is fruit-driven with subtle earthy funk and wet hay, complemented by a light toasted oak and vanilla presence. No hop aroma.
Taste. Initial impression is a burst of jammy, ripe apricot. A brisk, zippy acidity cuts through the fruit, leading to a mid-palate of soft vanilla and refined oak tannins. The fermentation character is exceptionally dry and crisp with stone fruit esters. Bitterness is low, allowing the fruit tartness and oak to provide balance. The finish is clean and lingering with a fruit-skin character.
Mouthfeel. Medium-light body with a subtle creaminess from the aged base. Carbonation is moderate-high and effervescent, accentuating the sherbety acidity. Low alcohol warmth; minimal astringency.

Wildflower - St Henry 2023: Apricot Price: $34 St Henry 2023 is the sixth edition of our annual apricot beer. For this latest cuvee, we used two different varieties of apricots, Trevatt apricots from Thornbrook Orchard in Nashdale, NSW and Robada apricots from Yarralee Orchard in Bathurst, NSW. 200kg of Trevatt and 156kg of Robada apricots, both of which were fresh, handpicked and tree ripened, went through a five month maceration with selected aged Gold before being bottled and allowed to naturally carbonate and mature in bottle before release. "As ever St Henry pours a beautiful golden colour. The nose is sweet and full of dried apricots and apricot skin, married with subtle chamomile floral notes. On the palate there is jammy ripe apricot swiftly met by zippy sherbety acidity. There’s elements of Gold there too, an almost creamy vanilla character and pleasant oak backbone to round out the experience." - Meesh's tasting notes.
