St Henry 2022 captures a profound expression of fresh Trevatt apricots, expertly integrated into the Wildflower Gold base ale. This Australian Wild Ale opens with a remarkably pure, perfumed nose where the stone fruit dominates, complemented by citrus and delicate spice. The palate is a complex tapestry of the whole fruit—weaving together sweet apricot flesh, tannic apricot skin, and a subtle nuttiness from the kernel. Layers of musk and pineapple emerge through the mixed-culture fermentation, while a tempered acidity and fine oak structure provide balance. The finish is exceptionally persistent, dry, and elegantly nuanced, showcasing the high attenuation and fruity depth of the Brettanomyces-driven fermentation.
Appearance. Deep gold to soft orange (8–10 SRM) with a slight, natural haze from the macerated apricots. It pours with a fine, persistent ivory head and moderate lacing.
Aroma. High intensity and deeply fragrant; the primary bouquet is a vivid, fleshy ripeness of stone fruit. Secondary notes of citrus zest and earthy spice meld with light floral esters and a clean, rustic funk characteristic of aged Brettanomyces, reminiscent of sun-dried hay.
Taste. Complex and evolving; initial impressions of sweet, ripe apricot give way to a structured middle of apricot skin and a hint of bitter kernel. The malt provides a neutral, crackery backdrop. Tropical notes of pineapple and floral musk add depth, balanced by a refined, low-to-moderate acidity and subtle oak tannins. It finishes bone-dry and crisp with a lingering fruit skin character.
Mouthfeel. Medium-light body with a lively, effervescent carbonation from natural bottle conditioning. There is a very subtle tannic grip from the fruit skins and oak, with no perceptible alcohol heat.
