The 2023 vintage of St Florence: Riesling is a masterful synthesis of barrel-aged golden ale and hand-picked Ravensworth Riesling grapes. This Australian Wild Ale greets the senses with a vibrant bouquet of lime zest, jasmine, and white peach, underpinned by the complex, rustic funk of native New South Wales yeast. The three-month maceration on whole-bunch grapes imparts an elegant structural acidity and mineral depth, layering flavors of green apple and apricot over subtle oak vanillin. Fermented by a diverse collection of wild flora, it concludes with a bone-dry, effervescent finish that highlights the sophisticated interplay between fruit and Brettanomyces.
Appearance. A bright, luminous deep gold with a slight haze; pours with a creamy, fine-beaded white head that exhibits moderate retention and leaves delicate lacing.
Aroma. High intensity aromatics featuring prominent Riesling notes of lime, floral jasmine, and white peach. These are beautifully integrated with a complex fermentation profile of hay, earthy funk, and light citrus esters. Subtle toasted oak and a hint of mineral dust add depth.
Taste. The initial impression is vinous and crisp, dominated by bright Riesling grape flavors and green apple. A clean, cracker-like malt base supports a sophisticated native yeast character of dried grass and stone fruit. Bitterness is low, as balance is achieved through grape-derived tannins and a delicate, non-lactic acidity. It finishes remarkably dry and clean with lingering floral notes.
Mouthfeel. Medium-light body with high, lively carbonation that provides a refreshing, spritzy mouthfeel. A very slight, pleasant grape-skin astringency adds structure, while alcohol warmth remains subtle and well-integrated.
