St Abigail 2024 is an elegant expression of a golden barrel-aged Brett Beer, showcasing the lush character of tree-ripened white peaches from Thornbrook Orchard. Fermented with a diverse mixed culture of yeasts and bacteria collected from native flowers in NSW, the profile bridges the gap between succulent orchard fruit and rustic, wild complexity. The 2024 vintage reflects a warmer harvest, translating into an intensified stone fruit core that integrates seamlessly with the delicate funk of the native flora. Nuanced barrel aging provides structure to this highly attenuated ale, resulting in a sophisticated, dry, and sensory-forward experience where the fruit takes center stage.
Appearance. Deep golden hue (6-8 SRM) with a slight, natural haze from fruit maceration and mixed culture fermentation. Pours with a lively, fine-beaded white head that shows moderate retention and leaves light, wispy lacing.
Aroma. High intensity of fresh white peach and nectarine, followed by yeast-derived esters of lemon zest and apricot. A nuanced wild character presents as dried hay, floral honey, and a faint earthy funk, supported by a clean, crackery malt base and very subtle oak.
Taste. The palate lead with a vibrant, juicy white peach flavor, transitioning into a lean, bready malt mid-palate. Fermentation character is complex, offering a light, refreshing tartness and rustic floral notes. Hop bitterness is very low, ensuring the fruit and native yeast character remain the focus. The finish is remarkably dry, crisp, and clean with a lingering stone fruit aftertaste.
Mouthfeel. Medium-light body with a prickly, high carbonation from natural bottle conditioning. Exceptionally smooth with no perceptible alcohol warmth and very low astringency, providing a refreshing and highly drinkable texture.

Pre-Order: Shipping Mid/Late August Wildflower St Abigail 2024: White Peach is a golden barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW refermented with white peaches. It is named for Emily and Chris’ second daughter. Saint Abigail was a medieval healer and beekeeper from County Clare, Ireland.In 2024, St Abigail was made by blending barrel aged golden mixed culture fermentation ale with 454kg of fresh, hand picked, whole, tree ripened white peaches from Thornbrook Orchard in Orange, NSW. After a five month maceration and refermentation of fruit and beer, it was bottled and allowed to naturally carbonate and mature before release.In 2023, we did not publicly release this beer so it is really nice to have it back. This year was just that slightly warmer harvest than in years previous which really suits the sugar development in stone fruits, especially these white peaches. The past few wet years (21,22 and 23) have produced fruit that carries more weight but also less flavour, which we see in our beers. These were ready to eat upon arrival, however, with great flavour... while I dont have a crystal ball, this forthcoming summer looks to be a good one for fruit so far.on.
