This Australian Wild Ale presents a masterclass in fruit integration, defined by an intense aromatic profile of tree-ripened white peaches and soft peach fuzz. The golden mixed-fermentation base provides a vibrant, acidic canvas that elevates the fruit beyond simple sweetness into a complex realm of vanilla custard, sponge cake, and delicate floral perfumes. On the palate, the hero is fresh peach flesh, supported by a sherbety, funky effervescence. Years of barrel aging have rounded the character, allowing the stone fruit to meld seamlessly with the wild yeast’s earthy depth, culminating in a persistent, clean, and incredibly fresh finish.
Appearance. Deep gold to amber-gold (6-8 SRM). Slightly hazy to cloudy from the heavy fruit refermentation and yeast. Pours with a moderate white head that shows fair retention and leaves light lacing.
Aroma. High intensity. Dominated by perfumed, ripe white peaches and fuzzy peach skin. Beneath the fruit lies a rich, dessert-like complexity of vanilla bean, custard, and light sponge cake. Secondary notes include a delicate, earthy funk, faint oak, and a bright, citrusy acidity.
Taste. Initial impression is an explosion of fresh peach flesh. The golden base beer provides a sharp, vibrant acidity that balances the fruit's perceived sweetness. Flavors of vanilla slice and light honeyed malt lead into a complex mid-palate of hay and mild funk. The finish is bone-dry and sherbety, with a lingering, funky peach aftertaste that persists for minutes.
Mouthfeel. Medium-light body with a soft, pillowy texture. High carbonation creates a lively, tingling sensation on the tongue. Very low alcohol warmth is well-integrated. No astringency, despite the significant fruit addition and barrel aging.
