This mixed culture Brett Beer presents a complex interplay between Wildflower’s signature house funk and a deep, saline minerality derived from the addition of Wapengo Rocks oysters and oyster shells. It leads with an evocative aroma of sea breeze, wet slate, and Meyer lemon, underpinned by earthy Brettanomyces notes of dried hay and soft orchard fruit. On the palate, a lean, cracker-like malt backbone yields to a distinctive schistosity—a flinty, mineral texture that echoes the rocky shores of New South Wales. The finish is exceptionally dry and crisp, leaving a lingering impression of briny freshness and subtle, rustic funk.
Appearance. Pale straw to light gold (3–4 SRM); fine, effervescent white head with moderate retention; slight haze with visible carbonation trails.
Aroma. Moderate to high intensity; bright citrus esters of lemon zest and unripe pear meld with rustic Brett character of sun-bleached hay and mild earthiness; a distinct saline, mineral quality suggests crushed sea shells and ozone.
