This Experimental Beer showcases a masterfully integrated collaboration between aged wild ale and the pressed skins of Muscat, Riesling, and Semillon. The sensory experience opens with flinty mineral notes and bright lemon citrus, evolving into a complex layer of mild green apple and light floral aromatics. A profound woody and herbal spice character emerges from the marriage of oak aging and skin contact. On the palate, it evokes French cider with notes of pear and marmalade, supported by standout phenolics reminiscent of apple skins. The finish is persistent and cleansing, reflecting a deep respect for old-vine viticulture and mixed-culture fermentation.
Appearance. Hazy gold to deep straw (4–7 SRM). Large, white, fine-beaded head with moderate retention and delicate lacing.
Aroma. High intensity and complex. Dominant flinty, mineral-like notes are balanced by bright lemon zest and tart green apple. Subtle floral esters from the Muscat and Riesling skins intertwine with a distinct woody, herbal spice. Very low, clean wild yeast funk; no buttery diacetyl.
Taste. Initial impression is bright and acidic, leading into a mid-palate of pear and dried citrus. Complex marmalade sweetness is tempered by a dry, oaky finish. Distinctive phenolics provide an apple skin grip and herbal depth. Hop bitterness is low, allowing the vinous acidity and skin tannins to provide the primary structure.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a lively, scrubbing texture. A slight phenolic astringency adds character and a drying sensation without being harsh. No noticeable alcohol warmth.
