This Australian Wild Ale showcases a singular integration of Warre Hive Propolis, lending a distinct resinous and herbaceous depth to the sensory profile. The base exhibits the characteristic dryness of a Brett Beer, layered with vibrant notes of stone fruit and Meyer lemon driven by Wildflower’s native mixed culture. The propolis introduces complex nuances of beeswax, dried wildflower honey, and a hint of forest floor, harmonizing with the subtle, earthy funk of the Brettanomyces. It finishes exceptionally clean and crisp, with a delicate, vinous acidity that brightens the resinous aromatics and highlights the meticulous balance between rustic fermentation and floral hive botanicals.
Appearance. Pours a hazy, pale straw to light gold (3–5 SRM). It features a persistent, moussy white head with excellent lacing and fine-beaded carbonation.
Aroma. High intensity aromatics of fresh apricot and lemon zest are immediately apparent. The unique propolis addition provides a deep, resinous perfume of pine sap, beeswax, and dried herbs. Moderate Brettanomyces character presents as wet hay and a delicate, floral funkiness.
Taste. Initial impression is bright and effervescent. Dominant flavors of peach and citrus pith meld with a complex, honey-like sweetness that remains dry on the palate. The propolis adds a structured resinous quality and a touch of herbal spice. Low bitterness provides just enough balance against a light, tangy acidity. The finish is bone-dry and lingering with a touch of mineral earthiness.
Mouthfeel. Medium-light body with high, prickly carbonation that scrubs the palate. The mouthfeel is crisp and lean, showing no astringency despite the resinous ingredients. Alcohol warmth is negligible.
