Wildflower Brewing & Blending Playing With Fire 2021

This Experimental Beer showcases a sophisticated marriage between golden wort and hand-harvested Semillon grapes from Tyrrell’s Estate. The native yeast from the Pokolbin terroir drives a complex sensory profile, diverging from the brewery's typical house culture. Expect bright aromas of lemon curd, green apple, and white peach, layered with the distinctive waxy lanolin and honeycomb notes characteristic of Semillon. On the palate, a crisp acidity leads into flavors of unripe stone fruit and subtle oak spice from barrel maturation. It finishes remarkably dry with a delicate tannic structure, offering a true expression of Australian wine-grape hybrid craftsmanship and terroir-driven fermentation.
Appearance. Pale straw to bright gold (4-6 SRM). Pours with a fine-beaded white head that dissipates quickly. Slight hazy shimmer from the grape solids and native fermentation.
Aroma. High intensity. Dominant notes of fresh Semillon grapes, featuring lemon zest, green pear, and a distinct waxy lanolin character. Native yeast fermentation introduces subtle earthy funk, wet hay, and light floral esters. Very low herbal hop presence is overshadowed by vinous complexity and a whisper of neutral oak.
Taste. Initial tartness of white wine and citrus pith. The mid-palate reveals layers of green apple, honeycomb, and white peach. The malt provides a light, cracker-like foundation that supports the fruit. Bitterness is virtually absent, allowing the grape acidity to provide balance. Finishes bone-dry with lingering notes of grape skin and soft wood tannin.
Mouthfeel. Medium-light body with a lively, spritzy carbonation that mimics sparkling wine. Smooth texture with a light tannic pull on the tongue. Alcohol presence is very well-integrated, providing only a faint, clean warmth.
