Patersonia emerges as a complex Brett Beer, shaped by spontaneous coolship inoculation and a signature rustic approach. The sensory profile is defined by a delicate interplay of floral wildflower notes and earthy funk, reminiscent of sun-dried hay and native Australian scrub. Vibrant stone fruit esters like apricot and peach mingle with a zesty lemon-like acidity. The palate is exceptionally dry and effervescent, showcasing a lean malt backbone of cracker-like grain. This wild fermentation yields a sophisticated, layered character that evolves from bright fruitiness into a lingering, mineral-driven, and pleasantly funky finish that reflects its spontaneous origin.
Appearance. Pale gold to straw (SRM 3-5) with a slight, natural haze. Pours with a fine-beaded, white head that shows moderate retention and delicate lacing.
Aroma. High intensity with a complex bouquet of funk and fruit. Prominent notes of wet hay, dusty earth, and barnyard funk are balanced by floral perfume and bright citrus. Low crackery malt presence with hints of apricot and white pepper yeast phenols.
Taste. Initial impression is bone-dry and crisp. Distinct stone fruit flavors and lemon zest are complemented by a rustic, earthy Brett character. Hop bitterness is mild, providing a clean counterpoint to the fruity esters and light non-lactic acidity. Finishes very dry with a lingering mineral and floral aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the crispness. No alcohol warmth is perceived at this strength. Very low astringency, finishing clean and refreshing.
