Lambrewski is a vibrant Brett Beer that celebrates the intersection of wild fermentation and viticulture. This collaboration features an extended six-month maceration on lightly pressed Lambrusco Maestri skins, imbuing the liquid with a rich plum hue and matching ruby-tinted foam. Brewed with regenerative organic grains, the sensory profile opens with sweet red fruit and concentrated raisin aromas. The palate shifts toward a more savory expression, where the juicy depth of the Lambrusco Maestri grapes meets a wild, floral fermentation character derived from native NSW flora. A subtle tannic grip provides structure, leading to a remarkably dry, savory finish that balances the initial fruit intensity.
Appearance. Rich plum to deep burgundy color (25-30 SRM); hazy with ruby highlights. Dense, persistent pinkish-red foam with fine lacing.
Aroma. High intensity. Dominated by vinous esters of red cherry, plum, and raisin. Complex wild fermentation profile includes light floral notes, earthy funk such as wet hay, and a hint of rustic dusty grain. No hop aroma is perceived.
Taste. Initial impression is tart red fruit and dark berries. Mid-palate reveals savory grain notes and a subtle, rustic wild funk featuring notes of leather and barnyard. Bitterness is low, with the balance driven by fruit acidity and grape skin tannin. It finishes very dry and savory with a lingering grape skin character and light mineral notes.
Mouthfeel. Medium-light body with high, sparkling carbonation. Noticeable tannic astringency from the grape skins provides structure and a puckering quality. Low alcohol warmth and no creaminess; very crisp and highly attenuated.
