Wildflower Brewing & Blending

How’s the Serenity offers a wild interpretation of an Australian Sparkling Ale, where organic Schooner barley and a touch of Black Patent malt create a deep gold, rustic base. The signature earthy and herbal profile of Pride of Ringwood hops is front and center, complemented by the orchard fruit esters of pear and apple. Wildflower’s house culture adds a layer of bright acidity and delicate funk, transforming the traditional profile into something uniquely complex. With high carbonation and a bone-dry finish, the beer balances firm bitterness with a spritzy, refreshing mouthfeel that highlights the marriage of heritage ingredients and wild fermentation.

Appearance. Deep gold to light amber (6-8 SRM) with a slight, natural haze from the house culture and puncheon aging. It features a tall, frothy, and persistent white head with fine, active bubbles and notable effervescence.

Aroma. Moderate intensity with a distinct earthy and herbal Pride of Ringwood hop character. Pears and red apples dominate the ester profile, supported by a bready Schooner malt base. The wild house culture contributes a noticeable funky complexity, including notes of hay, lemon pith, and light spice.

Taste. Initial grainy and bready malt flavors from the Schooner barley are quickly balanced by a firm, medium-high hop bitterness. Flavors of resin, pepper, and earthiness are prominent. The fermentation character is dry and tart, featuring green apple esters and a rustic funk. The finish is exceptionally crisp and highly attenuated, leaving a lingering, slightly iron-like hop bitterness.

Mouthfeel. Medium body with very high, prickly carbonation that creates a spritzy, mouth-filling carbonic bite. It is bone-dry on the palate with no residual sugar and a smooth, well-integrated alcohol presence.
